You should be able to do that with an external box, not with untrusted software
on the Windows PC.
Don't let the Windows PC make any kind of outbound connection it doesn't need to
make.

Laptops should be imaged more frequently if possible/feasible and that BartPE CD
can get the needed documents off the infected PC leaving the malware behind
before you restore the last image.
